NEW ORLEANS, LOUISIANA…are the words that bring a "wonder land" kind of vision to all lovers of good food, booze and music. For a long time N'Orleans in the United States has been home to some of the best chefs and musicians in the world. Most of them, starting with humble beginnings have carved themselves a name in there respective fields. Bourbon Street is perhaps the grandest little street in Louisiana. It is the hub of all the fun, food and excitement of the Big Easy. With stunning old buildings, fantastic dining, great bars, the sounds of blues & jazz, crowds of people with colourful beads, it has become a classic part of the New Orleans scene. The Cajuns from the Acadian region of Nova Scotia, Canada, came down and settled in the south part of Louisiana. And that was the beginning of the great city of N'Orleans. The Cajuns spoke french and the food culture was definitely very French. Now in this new land, they integrated the local ingredients and took French food to even greater heights. Over the years the slave ships brought people from Africa and other continents, who in turn brought their own food culture-- spices & herbs, vegetables like okra and tomatoes, chillis, etc. The two very different styles of Cajun & Creole were brought together by the many chefs of N'Orleans, who did not care for the distinctions between them. Hence the very unique New Orleans cuisine was created. Part French, part African, part soul, sprinkling of fun and lots of love = good food !!! And that was my concept when I opened in Tokyo, ten years ago : GOOD FOOD AND LOTS OF IT. A mixture of Cajun & Creole styles, with a lot of original and seasonal stuff. I have tried to feature South Louisiana cooking from our fancy urbane dishes to down home cooking. After two years of feeding the hungry masses, I realised the need to satisfy the drunken hordes, so I opened the bar across the street. Good N'Orleans food needs to be washed down with a lot of a booze and music !
And there you go….now there's the Louisiana Kitchen and the bar across it….a taste of N'Orleans right here in Tokyo, Japan.
